    Shiga Farm Nagano - Supplier

    Shiga farm is the first organic farm we worked with. There produce is amazing all the time, although they do not cover the ‘Organic Label’ but there practice is 100% organic creating their own fertiliser from locally grown rice husks.

    We get our delivery every Monday but if you would like to enjoy their amazing produce contact them directly to have a vegetable box delivered to your door.

    Miura, Kanagawa - Supplier

    This here is Kuba san. one of our suppliers who delivers fresh produce from the Miura peninsular co-operative of organic farmers.

    The quality of their vegetables and salads is first class but as you can imagine rather expensive. We can negotiate better prices with these cooperatives if we buy from them in large enough quantities.

    Which is why we need the support of the YIS community to eat with us at Dragon Dining.

    Alishan supplies us with organic, healthy and sustainable ingredients from around the world. The owner Jack was surprised but mighty impressed that a school wanted to use their organic produce so he has given us a great deal on my bulk items.

  • Lunches at YIS

    We understand the need for choice, we also understand how peoples food ethics and diets are changing. Dragon Dining is now offering more Plant-based, vegan and vegetarian items to the YIS community.

    Recipes

    We have shared our recipes on CookPad where we will continue to add to this. If there is a dish, or item we serve at YIS and you would love to know how we make this please email us and we will try and add this to CookPad.

    Lunches

    Every school day we offer two choices at the lunch counter; Meat based and vegetarian. Both are nutritious, delicious, safe and cooked fresh on site.

     

    We already work with some amazing local suppliers and Martin our head chef turns our recipes and ideas into delicious lunches.

    The menus at YIS will continue to offer non-vegan options but as always we will continue to evolve as the world changes and as our customers change.

     

    We offer a wide selection of lunch and snack items that are vegan and vegetarian.

     

    Where possible we do use less meat and more beans pulses and seeds, to improve flavour, nutrition, and smiles.

    Principles

    Emphasises whole, minimally processed foods.

     

    Limits or avoids animal products.

     

    Focuses on plants, including vegetables, fruits, whole grains, legumes, seeds which should make up the majority of what you eat.

     

    Excludes refined foods, like added sugars, white flour and processed oils.

     

    Pays special attention to food quality, with many proponents of the WFPB diet promoting locally sourced, organic food whenever possible.

    Education

    Dragon Dining offers a program dedicated to educating children about healthy eating.

     

    A Dragon Dining chef will teach hands-on, interactive nutrition lessons at various times during the school year.

     

    Students will be encouraged to eat a good balance and variety of real foods, as opposed to strict diets or harsh rules.

     

    Students learn to make smart choices about food and to be mindful about what is healthy versus not-so-healthy.

     

    They learn not to overload on sugars, overly processed foods and unhealthy fats.

     

    Through frequent food tastings, our students are introduced to a variety of tasty, healthy foods and adopt healthier options within the diverse cultures we serve.
